Skinny Pumpkin Pie for One

Skinny Pumpkin Pie for One

A single serving of pumpkin pie with zero guilt!

Ingredients

  • 1/2 cup pumpkin puree
  • 2oz fat free cream cheese (or nufchatel, softened)
  • 1/4 teaspoon cinnamon
  • 1 pinch nutmeg
  • 2 nectresse packets (or other zero calorie sweetner)
  • 1 graham cracker sheet (crushed)
  • 2 tablespoons whipped cream

Directions

Step 1
Crush the graham cracker and place in the bottom of a glass or small jar.
Step 2
Using an electric mixer beat together cream cheese, pumpkin, cinnamon, nutmeg, and sweetner until creamy and smooth. Spoon on top of the crumbs. Chill for at least 2 hours to allow the flavors to develop.
Top with whipped cream and a dash of cinnamon if desired before serving.
