No Bake Strawberry Lemon Cheesecake Pie

No Bake Strawberry Lemon Cheesecake Pie
No Bake Strawberry Lemon Cheesecake Pie is the ultimate summer dessert! Light, creamy lemon cheesecake is loaded with strawberries atop a golden Oreo crust!

Ingredients

Crust

  • 18 golden oreos
  • 6 tablespoons unsalted butter

Filling

  • 8oz cream cheese (softened)
  • 1 1/2 cup powdered sugar
  • 3 tablespoons lemon juice
  • zest of 2 lemons
  • 8oz whipped topping
  • 1 1/2 cup diced strawberries (patted dry)

Topping

  • sliced strawberries (about 6 large strawberries)
  • 4 golden oreos (cut in half)
  • 3oz whipped topping
  • lemon zest/lemon slices

Directions

Crust
Step 1
In a food processor, pulse oreos (with filling) until finely ground.
Stir with melted butter.
Press into the bottom and up the sides of a greased 9 1/2" pie dish.
Freeze while making the filling.
Filling
Step 2
In a large mixing bowl, beat the cream cheese until smooth and creamy.
Mix in sugar, lemon juice, and lemon zest until smooth.
Gently fold in Cool Whip and strawberries.
Spread evenly over crust.
Toppings
Step 3
Arrange sliced strawberries over the top of the pie.
Pipe Cool Whip around the edges in 8-10 spots (depending on how many you are serving)
Place an oreo in each dollop of whipped topping, and a strawberry slice between each dollop of whipped topping.
If desired, add lemon zest and a lemon slice on the pie.
Refrigerate at least 2 hours.
