These soft and chewy Mint Chocolate Chip Cookies are dipped in chocolate and sprinkled with even more mint pieces! An easy, festive Christmas cookie!
Ingredients
Cookies
- 1 cup unsalted butter (softened)
- 1/2 cup brown sugar
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 egg
- 1 teaspoon baking soda
- 2 1/4 cups all purpose flour
- 1 cup chocolate chips
- 1 1/2 cup Andes Mint Baking Pieces
Topping
- 10oz melted chocolate (melting wafers, or chocolate chips)
- 3/4 cups Andes Mint Baking Pieces

Step 1 | |
Preheat oven to 350 In a large mixing bowl, cream together butter and sugars. | |

Add salt, vanilla, and egg and mix well. | |

Mix in vanilla and baking soda. | |

Add flour and mix on low until incorporated. | |

Stir in chips and mints. | |

Drop cookie dough by 2 TBS scoops on a silicone baking mat or parchment lined cookie sheet 2" apart. Bake 9-10 minutes or until lightly golden around the edges. Allow to cool a few minutes on the cookie sheet before moving to a wire rack to cool completely. | |

Once cookies are completely cool, dip one side of each cookie into the melted chocolate and sprinkle with mint pieces. Allow chocolate to set up before storing in an airtight container. |
