Lemon Cupcakes with Lemon Frosting

Lemon Cupcakes with Lemon Frosting

Light and fluffy Lemon Cupcakes with Lemon Frosting are bursting with flavor! They are so moist and bright and the sprinkles add a nice crunch and beautiful color to the smooth, creamy frosting!

Ingredients

Cake

  • 1/2 cup butter (softened)
  • 1/3 cup canola oil
  • 2 cups sugar
  • 1/2 cup lemon luice
  • 1/2 cup plain Greek yogurt
  • 2 eggs
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract
  • 2 tablespoons corn starch
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 2 1/4 cups flour

Frosting

  • 1/2 cup butter (softened)
  • 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 3-4 tablespoons lemon luice

Directions

Cake
Step 1
Preheat oven to 350
In a large mixing bowl cream together butter, oil, and sugar. Then add remaining cake ingredients and beat on low until combined, then beat on medium for 1 minute. Pour into prepared cupcake tins and bake 14 minutes or until done. Remove from tins and let cool completely before frosting.
Frosting
Step 2
In a bowl beat together the butter, sugar, vanilla, and 2 TBS of lemon juice. If needed add more lemon juice and beat until light and fluffy. Spread or pipe onto cooled cupcakes. Add sprinkles if desired.
