This recipe makes the best Lemon Blueberry Muffins! They are fluffy, and moist with lots of vibrant lemon, juicy blueberries, and a crunchy sugar crust!
Ingredients
- 3 1/4 cups all purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter (melted)
- 2 eggs
- 2 teaspoons vanilla
- 2 cups milk
- 1/4 cup lemon juice (about 2 lemons)
- 2 teaspoons lemon zest
- 3 cups blueberries
- extra sugar for sprinkling (coarse sugar makes a great crunchy topping)

Preheat oven to 400* Mix all the dry ingredients in a medium bowl and set aside. Whisk together all the wet ingredients and add dry ingredients. Stir just until combined - it will be lumpy, thanks ok! Stir in blueberries. | |

Grease muffin tins and sprinkle with sugar. Fill tins 3/4 with batter and sprinkle tops with coarse sugar and bake 18 minutes or until tester comes out clean. Let cool and store in a sealed container. |
