Lemon Blueberry Muffins

This recipe makes the best Lemon Blueberry Muffins! They are fluffy, and moist with lots of vibrant lemon, juicy blueberries, and a crunchy sugar crust!

Ingredients

  • 3 1/4 cups all purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (melted)
  • 2 eggs
  • 2 teaspoons vanilla
  • 2 cups milk
  • 1/4 cup lemon juice (about 2 lemons)
  • 2 teaspoons lemon zest
  • 3 cups blueberries
  • extra sugar for sprinkling (coarse sugar makes a great crunchy topping)

Directions

Step 1
Preheat oven to 400*
Mix all the dry ingredients in a medium bowl and set aside.
Whisk together all the wet ingredients and add dry ingredients. Stir just until combined - it will be lumpy, thanks ok! Stir in blueberries.
Step 2
Grease muffin tins and sprinkle with sugar. Fill tins 3/4 with batter and sprinkle tops with coarse sugar and bake 18 minutes or until tester comes out clean. Let cool and store in a sealed container.
