Double Chocolate Shortbread Cookies

Double Chocolate Shortbread Cookies make a beautiful addition to your Christmas Cookie tins! Rich, buttery, crisp, tender cookies decorated for Christmas!

Ingredients

  • 1 cup unsalted butter (softened)
  • 1/2 cup unsweetened cocoa powder
  • 1 cup powdered sugar
  • 1/2 teaspoon salt
  • 1 1/2 cup all purpose flour
  • 1/2 cup mini chocolate chips

Directions

Step 1
In a large mixing bowl, cream together the butter and sugar until light and fluffy.
Step 2
Add cocoa powder and salt and mix well.
Step 3
Gradually add the flour while mixing on low, until combined.
Step 4
Stir in chocolate chips.
Step 5
Divide dough in half and place each half on a piece of plastic wrap. Roll the dough into two 7" logs and chill 2 hours.
Step 6
Preheat oven to 325.
Step 7
Slice the dough logs into 1/4" wide discs and bake them on an ungreased baking sheet 2" apart for 12-14 minutes.
Step 8
Allow to cool a few minutes before transferring to a cooling rack to cool completely.
Step 9
*Optional* Once completely cooled, you can drizzle or dip in chocolate, and add sprinkles, crushed candy canes, or decorate as desired.
