Double Chocolate Shortbread Cookies make a beautiful addition to your Christmas Cookie tins! Rich, buttery, crisp, tender cookies decorated for Christmas!
Ingredients
- 1 cup unsalted butter (softened)
- 1/2 cup unsweetened cocoa powder
- 1 cup powdered sugar
- 1/2 teaspoon salt
- 1 1/2 cup all purpose flour
- 1/2 cup mini chocolate chips
Directions
Step 1 | |
In a large mixing bowl, cream together the butter and sugar until light and fluffy. | |

Add cocoa powder and salt and mix well. | |

Gradually add the flour while mixing on low, until combined. | |

Stir in chocolate chips. | |
Step 5 | |
Divide dough in half and place each half on a piece of plastic wrap. Roll the dough into two 7" logs and chill 2 hours. | |

Preheat oven to 325. | |

Slice the dough logs into 1/4" wide discs and bake them on an ungreased baking sheet 2" apart for 12-14 minutes. | |

Allow to cool a few minutes before transferring to a cooling rack to cool completely. | |

*Optional* Once completely cooled, you can drizzle or dip in chocolate, and add sprinkles, crushed candy canes, or decorate as desired. |
