Creamsicle Muffins are a welcome treat for breakfast or brunch. They are light and fluffy with vibrant orange flavor, studded with white chocolate chips!
- 1/4 cup unsalted butter, melted
- 1/4 cup canola oil
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 1/3 cup plain Greek yogurt
- 1/3 cup orange juice
- zest of one orange
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 cups all purpose flour
- 3/4 cups white chocolate chips
|Preheat oven to 350 and grease a 12 cavity muffin tin.|
|IN a mixing bowl stir together the butter, oil, sugars, eggs, yogurt, orange juice and zest, and vanilla. Set aside.|
|In a separate bowl whisk together flour, baking powder, and baking soda. |
Add the dry ingredients to the wet, and stir gently until just combined. Stir in white chips.
Spoon into muffin tin filling 12 cavities 3/4 full.
Bake 13-15 minutes or until tester inserted into center muffin comes out clean.
Let cool in tins about 10 minutes before cooling completely on wire rack.
Store in a covered container.
