Chocolate Caramel Gooey Cookies

These Chocolate Caramel Gooey Cookies are simple to make with a cake mix! They are soft and chewy with a gooey caramel center!

Ingredients

  • 1 box devil's food cake mix
  • 1/2 cup butter (softened)
  • 1 egg
  • 3/4 cups shredded sweetened coconut
  • 24 rolos

Directions

Step 1
In a large bowl mix the cake mix with the softened butter and egg until well combined. Stir in coconut. Roll dough into 24 balls, each around 1 unwrapped rolo, making sure to cover the candy completely. Place on ungreased cookie sheet 2" apart.
Step 2
Bake at 350 for 8 minutes. Let cool on pan for a few minutes before transferring to wire racks to cool completely. Store in a tightly sealed container.
