These Chewy Lemon Cookies are downright irresistible! Light and chewy, with a punch of lemon and sweet white chocolate chips. Your new favorite cookie!
Ingredients
- 3/4 cups unsalted butter (softened)
- 1 1/2 cup granulated sugar
- 2 1/2 tablespoons lemon juice
- 1 egg
- 1/4 teaspoon salt
- 1 teaspoon lemon extract (or vanilla)
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 2 1/4 cups all purpose flour
- 1 1/2 cup white chocolate chips

Preheat oven to 350. In a mixing bowl cream the butter and sugar. Add the lemon juice, egg, lemon extract, and salt and mix well. Mix in baking powder and baking soda. Add flour and mix until combined. Stir in white chips. | |

Drop by 2 TBS scoops onto a silicone baking mat or parchment lined baking sheet 2" apart. Bake 8-10 minutes or until barely golden on the edges. Let sit on baking sheet for a few minutes before transferring to a cooling rack. Store in an airtight container. |
