Boston Cream Pie Parfaits from Scratch

Making Boston Cream Pie Parfaits from Scratch isn't a hard as you may think. This is a recipe I've made for my family for years, and it's always a favorite!
Ingredients
Cake
- 1/2 cup unsalted butter
- 1/4 cup canola oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1 1/2 cup milk
- 1 teaspoon salt
- 1 tablespoon baking powder
- 2 cups granulated sugar
- 2 1/2 cups all purpose flour
Custard
- 2/3 cups granulated sugar
- 4 tablespoons corn starch
- 1/4 teaspoon salt
- 3 cups milk
- 4 egg yolks
- 2 teaspoons vanilla extract
- 1 teaspoon almond extract
Ganache
- 2 cups chocolate
- 3/4 cups cream or whole milk

Step 1 | |
Preheat oven to 350 In a mixing bowl combine all cake ingredients on low speed, then beat on high for 3 minutes. Pour into a greased 9x13" baking pan and bake about 35 minutes or until a tester comes out clean. Let cool. | |
Custard | |
Step 2 | |
In a large sauce pan stir together all custard ingredients except vanilla and almond extracts over medium heat. Continue stirring and bring to a boil. Let boil for one minute. Remove from heat and stir in vanilla and almond extracts. Let cool. | |
Step 3 | |
In a glass bowl heat the milk or cream in the microwave for 90 seconds, or until it's simmering. Pout in chocolate and let it sit for 2 minutes. After 2 minutes, stir until smooth. Let cool slightly. | |
Step 4 | |
Once everything has cooled, cut the cake into cubes and start assembling the parfaits. Layer cake, custard, and ganache, and repeat until parfait glasses are filled, ending with ganache. Chill until ready to serve. |
