Banana Cream Pie Poke Cake

Banana Cream Pie Poke Cake
Serves 24

Ingredients

Cake

  • 4 tablespoons unsalted butter (softened)
  • 1/3 cup oil
  • 3 Large ripe bananas (mashed)
  • 1 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 1/2 teaspoon salt
  • 3/4 cups milk
  • 1/3 cup sour cream
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 1/4 cups all purpose flour

Topping

  • 4 Medium bananas
  • 8oz whipped cream
  • 30 vanilla wafer cookies

Filling

Directions

Step 1
Preheat oven to 350
In a mixing bowl beat together the butter, oil, bananas, and sugar. Add the eggs, vanilla and salt and mix well. Add the milk and sour cream until well bended. Carefully mix in the flour, baking soda, and baking powder just until combined. Pour into a greased 9x13" cake pan and bake for about 25 minutes or until tester comes out clean or with a few crumbs.
Filling
Step 2
Allow cake to cool then poke all over with the end of a wooden spoon to make pockets for the banana filling to come through. Pour banana pudding evenly over cake.

Topping
Step 3
Slice bananas and lay them in a single layer all over the cake. Cover with whipped cream. Crush 6 vanilla wafers and sprinkle over cake. Chill a few hours.
When ready to serve, cut into 24 pieces and place a vanilla wafer on top of each piece.
