Marshmallow Brownies

There isn't much better than a fudge brownie made from scratch...unless they're Marshmallow Brownies! These are rich and fudgy and ooey gooey delicious!
Ingredients
- 1 cup unsalted butter (melted)
- 1 cup cocoa powder
- 2 cups granulated sugar
- 4 eggs
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 1/4 cup all purpose flour
- 1 1/2 cup semi sweet chocolate chips (divided)
- 3 cups mini marshmallows
- sprinkles
Directions

Preheat oven to 350 In a mixing bowl stir cocoa and melted butter until combined. Add sugar and mix well. Stir in eggs one at a time. Add vanilla and salt and mix together. Mix in the flour until well combined. Stor in 3/4 cup chocolate chips. Spread into a greased 9x13" pan and bake about 18 minutes. | |
Step 2 | |
Pour marshmallows and remaining chips evenly over the top of the brownies and bake 2-3 more minutes or until the marshmallows puff up and just start to turn golden. Allow to cool completely before cutting into squares. Store covered at room temperature. |

You certainly have had your hands full with 4 kiddies under 5 and yes I agree, the “first” of anything is hard to swallow, but each season of life is precious. My youngest is now 8, my middle one is going into 6th and my oldest is starting 9th. OMG i am a mom to a highschooler!! I hope your daughter had a wonderful first day of school!

Oh, how well I remember those “first” days. They were almost always harder for me than they were for my daughter. Now she’s all grown with two of her own (1 high schooler and 1 third grader). Just try to enjoy it because they grow up so fast! And…brownies definitely help 🙂

My oldest is going to Kindergarten for the first time next week and my youngest just turned 3 as well! We did send him to preschool for the past two years, but I can tell you, it doesn’t make it any easier on me – I’m a mess already! These brownies would be the perfect way to forget all my worries, haha!
