Glazed Cherry Chocolate Chip Shortbread Cookies

INCREDIBLE Glazed Cherry Chocolate Chip Shortbread Cookies are the perfect addition to your Christmas cookie tray! Not overly sweet, but perfectly festive!
Ingredients
Cookies
- 1 cup unsalted butter (softened)
- 2/3 cups powdered sugar
- 1 teaspoon vanilla
- 1/4 teaspoon almond extract
- 1/2 teaspoon salt
- 2 cups all purpose flour
- 1/2 cup mini chocolate chips
- 3/4 cups candied cherries (chopped)
Glaze
- 1 1/2 cup powdered sugar
- 1/4 teaspoon almond extract
- 2 teaspoons water
Directions

Step 1 | |
In a large mixing bowl, cream butter and sugar. Add vanilla and almond extracts and salt and mix well. Add flour, mixing slowly until combined. Stir in cherries and chocolate chips. | |

Divide dough in half and place each half on a sheet of plastic wrap. Roll the dough into 2 logs, about 1 1/2" thick and 8"long. Wrap tightly and chill about 2 hours. | |
Step 3 | |
Preheat oven to 325. Slice the logs of dough into about 1/4"-1/3" thick cookies, and place on an ungreased cookie sheet. Bake 10-12 minutes. Allow cookies to cool completely before glazing. | |
Glaze | |
Step 4 | |
Stir together sugar, almond extract, and 1 tsp water until smooth. You want a glue like consistency. Add more water if too thick. Dip the tops of each cookie into the glaze, and allow to harden before storing in a sealed container. |
