Today is my birthday!! Actually, I am writing this a couple days in advance because I plan on taking the day off on February 12th 🙂 I’m not sure how I’ll be spending the day, but I know I will be with my hubby and 5 babies, and I plan on eating some chocolate. So it should be a pretty nice day!
If you have a chocolate lover in your life, you need to make them some of these cookies this Valentine’s Day! Or just make them for yourself – you deserve them!
You may have had gooey butter cake before, made with cake mix. Definitely yummy, but the cake mix is not necessary! It’s totally just as easy to make from scratch! These are thick, soft, and puffy thanks to cream cheese, but the centers are rich and gooey courtesy of melted chocolate and butter. These are just delicious – plain and simple! Enjoy!
Chocolate Crinkle Gooey Butter Cookies from Scratch!
Serves | 40 |
Cook time | 9 minutes |
Ingredients
- 1/2 cup unsalted butter (softened)
- 8oz cream cheese (softened)
- 3/4 cups cocoa powder
- 1/2 cup powdered sugar
- 1 cup granulated sugar
- 1 teaspoon vanilla
- 2 eggs
- 1/2 teaspoon salt
- 2/3 cups melted chocolate chips (slightly cooled)
- 2 teaspoons baking powder
- 1 2/3 cup all purpose flour
Directions
Step 1 | |
In a large mixing bowl, cream together the butter and cream cheese. Add cocoa, sugars, and vanilla and mix well. Add salt and eggs and mix again. Mix in chocolate until well combined. Add baking powder and flour and mix well. Cover and chill at least 2 hours. | |
Step 2 | |
Preheat oven to 325 Roll chilled dough into 1 1/2" balls and roll them in powdered sugar. Place 2" apart on an ungreased cookie sheet (I like using a silicone baking mat or parchment paper lined cookie sheet). Bake 7-9 minutes or until tops crackle. They will be very soft until they start to cool. Allow cookies to cool on the baking sheet for several minutes before transferring to a wire rack to cool completely. Store in a sealed container. |
