BEST Pumpkin Chocolate Chip Cookies
These are the BEST Pumpkin Chocolate Chip Cookies ever! Soft and chewy, loaded with chocolate chips, plus a secret ingredient that will make you swoon!
Ingredients
- 1/2 cup unsalted butter
- 3/4 cups creamy peanut butter
- 2/3 cups pumpkin puree
- 1 3/4 cup granulated sugar
- 1 egg
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 2 cups all purpose flour
- 2 cups semi sweet chocolate chips
Directions

In a microwave safe bowl melt the butter and peanut butter, stirring until smooth. Add to mixer along with pumpkin and sugar and mix well. Add the egg, salt, and vanilla, mixing well. Add baking soda and flour and mix on low until incorporated. Stir in chips. Cover the bowl and chill in the refrigerator for 1 hour. | |

Once chilled, drop dough by spoonfuls onto baking sheet. (I like to line mine with silicone baking mats). Bake at 350 for 10-11 minutes. They will look slightly underdone, but you want them to stay soft and chewy - do not over bake! Cool on baking sheet for a few minutes before transferring to cooling racks. Store in a covered container at room temperature. |
