The Best Ever Texas Sheet Cake

Ingredients

- 1 cup unsalted butter (melted)
- 1 cup water (boiling)
- 1/2 cup cocoa powder
- 1 3/4 cup granulated sugar
- 1/2 cup sour cream
- 2 eggs
- 1 1/4 teaspoon baking soda
- 2 cups all purpose flour
Frosting
- 1/2 cup unsalted butter
- 1/2 cup cocoa powder
- 1/3 cup milk
- 4 cups powdered sugar

Preheat oven to 350 In a large bowl stir together melted butter, boiling water and cocoa until smooth. Mix in sugar, eggs, and sour cream until well blended. Add in baking soda and flour and carefully stir until smooth. Pour batter into a greased jelly roll pan (13x18"). Bake 18-20 minutes or until toothpick inserted into the cake comes out clean. | |

Make the frosting while the cake bakes. In a medium sauce pan melt the butter with the milk and cocoa powder. Stir to combine and bring to a boil. Once it boils turn off the heat and stir in the powdered sugar until well incorporated. Pour evenly over cake as soon as it comes out of the oven. |

Just wondering if I can use a 10 1/2 ” x 15 1/2 ” jelly roll pan instead? And will the baking time just the same?

Hi Pauline, If the sides of your pan are at least 1 1/2″-2″ tall then you would be just fine baking in the smaller pan. You may need to add a few minutes of cooking time though. Enjoy!

You can use salted if that’s what you like to use. I always use unsalted so I have control over the salt content in the recipe. Hope you enjoy the cake – we love this one!! 🙂

Just finished frosting this! Oh. My. Glob. It’s amazing! I didn’t have a jelly roll pan so I used a regular 9×13 Pyrex and added 5 minutes to the time. Turned out perfect! I also used vanilla almond milk instead of milk. It’s seriously the best cake ever and soooooooo easy.
