I love, love, love Mexican food and I really love fast and easy dinner ideas! This casserole is an easy and super tasty dinner with some delicious Mexican flavors that the whole family will love!
A few days ago I headed to Walmart to try out the Tex Mex Chicken Fajita Recipe Makers from Kraft. I have made the New England Pot Roast and was ready to experiment with a new flavor. Like, I said, I love Mexican food, so this was an easy choice.
Instead of making the fajita recipe on the box, I used the same ingredients to make a comforting, cheesy casserole! It has been so stinkin cold here, that a nice hot casserole sounded like the perfect meal.
You guys, this was so good! It only took a few minutes of prep time and 25 minuted in the oven and the result was fantastic! I love when you can make a delicious, well balanced meal out of just a handful of simple ingredients in a small amount of time. It sure makes dinnertime more pleasant! What are some of your family’s favorite comfort foods?

My husband LOVED this. We had no leftovers! I definitely wanted to add refried beans per another comment, but I did not have any. Since the Kraft fajita mix is no longer available, I used my favorite Fajita sauce by Frontera (from Target) and I used a mix of taco bell Mild chunky salsa and a bunch of Ortega Medium taco sauce. I did small flour tortillas and cut them up to small pieces to avoid the annoying soggy tortillas that are impossible to serve up. It turned out great.

I don’t love freezing casseroles using tortillas because they tend to get soggy, so I have not tried freezing this particular recipe. If you try it, let me know how it work out for you!

I’m a little late to the party….
We’re not big fans of adding tortillas to casseroles, my husband and I don’t care for the texture once it’s cooked. There is a little market in the hospital I have to frequent for a medical issue and they make awesome Mexican rice bowls. Do you think I could add rice to this instead of the tortillas? Would 1.5-2 cups cooked rice work?

I made mine with fajita seasoning, lime juice & Olive oil. Also added a couple of layers of refried beans too! It was yummy!

The Kraft recipe makers have been discontinued. Can it be made with fajita mix and salsa in place of the kraft?

Hi Jane, The tomatoes are from a salsa that comes in the Kraft Recipe Makers box. No other tomatoes were added 🙂 Hope you give this a try – it’s so good!

I have looked at Shop n Save and Schnucks both for the Kraft Recipe Maker kits and cannot find them and I’ve asked and they have no idea what I’m talking about. Where did u happen to find yours?

I couldn’t find the kit either so I improvised. I used a packet of Ortega Fajita Skillet sauce and bought salsa! : )

Is there an alternative product(s) I can use for the Recipe Makers? I know this is the key ingredient for this dish, but I’ve call ALL the stores in my area and no one sells this. I REALLY want to make this. 🙁

Nikki, I would just add 1 tsp cumin, 1 TBS chili powder, 1 1/2 tsp garlic powder, and 1 1/2 tsp onion powder. And add salt to taste. Or just add a packet of fajita seasoning if you prefer. If it seems a bit dry just add in some olive oil. Hope you give it a try. We love this!
