Chocolate Chip Coconut Carrot Cake Whoopie Pies are a fun sweet treat with an out of this world cream filling! These come together quickly, and no special pans are required. Hooray – Let’s get baking!
I don’t know why I don’t make whoopie pies more often. They are like a combination of a cookie and cake – but you get to eat two at once and there’s a generous serving of cream filling in between the two pies. They’re kinda perfect.
This recipe in particular is wonderful because the batter is nice and thick, so if you don’t have a special whoopie pie pan, just drop spoonfuls of batter onto a cookie sheet. That’s what I did and it worked like a charm.
I know some people have issues with carrot cake. I happen to enjoy it as long as it doesn’t have nuts or raisins. I added chocolate chips and coconut….it’s sooooo good, guys. This filling is crazy, I’m warning you. Make a double batch. You’ll need it. Trust me. You will be taste testing – a lot.
