No-Bake Pineapple Coconut Cookies

Ingredients
- 14oz white chocolate chips
- 1 tablespoon vegetable oil
- 3 1/2 cups corn flake cereal
- 2/3 cups chopped dried pineapple
- 1/3 cups chopped walnuts
- 1 cup sweetened coconut
- 1/4 teaspoons rum extract
- 1/4 teaspoons coconut extract
Directions

| In a large microwave safe bowl, melt the white chocolate with the oil, stirring every 30 seconds until smooth. | |

| In another bowl, stir together all of the remaining ingredients except for the extracts. | |

| Stir the extracts into the white chocolate and quickly and gently add in remaining ingredients. (If chocolate seizes from the extracts just stir in a bit more oil to smooth it out again). | |

| Drop by heaping spoonfuls onto wax paper lined cookie sheets. Allow chocolate to set up completely before storing in an air tight container. | |
