Flourless Chocolate Cookies

  • 4 egg whites
  • 3 cups powdered sugar
  • 2/3 cup unsweetened cocoa powder
  • 1/4 tsp salt
  • 2 tsp vanilla
  • 1/2 cup mini semi sweet chocolate chips


  • Preheat oven to 350*
  • In a medium sized bowl, beat the egg whites until very frothy. Set aside.
  • In a large bowl, whisk together powdered sugar, cocoa powder, and salt.
  • Add vanilla and egg whites and mix until well combined.
  • Stir in chocolate chips.
  • On a parchment or silicone mat lined cookie sheet, use a 1/2" (2tsp) cookie scoop to drop dough balls 2" apart.
  • Bake for 8 minutes.
  • Allow cookies to cool for a few minutes before transferring to a cooling rack to cool completely.
  • Store in an airtight container.
