Triple Chocolate Brownie Zucchini Muffins

Triple Chocolate Brownie Zucchini Muffins

Triple Chocolate Brownie Zucchini Muffins
Serves 24
Prep time 15 minutes
Cook time 15 minutes
Total time 30 minutes
Triple Chocolate Brownie Zucchini Muffins are moist, fudgy muffins, made with three kinds of chocolate, that taste like brownies! A great use for zucchini!

Ingredients

  • 1/2 cup unsalted butter (melted)
  • 1 3/4 cup granulated sugar
  • 3/4 cups cocoa powder
  • 3 eggs
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3 1/2 cups all purpose flour
  • 1 1/2 cup shredded zucchini
  • 1 cup chocolate chips
  • 1 cup white chocolate chips

Directions

Step 1
Preheat oven to 350
In a mixing bowl add melted butter, sugar, and cocoa powder and mix well. Add eggs, one at a time, mixing well after each addition. Add salt, vanilla, powder, and soda, and mix well. Gradually add flour and mix on low until combined. Stir in chocolate chips and white chips.
Step 2
Add 24 muffin liners to muffin tins and fill each one 3/4 full. Bake 15 minutes or until tester comes out clean or with fudgy crumbs. Allow to cool completely before storing in a sealed container.
