Skinny Crock Pot Chicken and Veggie Chowder

Skinny Crock Pot Chicken and Veggie Chowder
Serves 6-8
Prep time 15 minutes
Cook time 8 hours
Total time 8 hours, 15 minutes

This chowder is not only hearty and comforting, it's also healthy! Plus it's made in the crock pot - so easy!!

Ingredients

  • 6 cups chicken stock
  • 2 boneless skinless chicken breasts (cut into bite sized pieces)
  • 1 Medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 stalks celery (chopped)
  • 4 cups potatoes (cubed)
  • 1 can corn
  • 2 bay leaves
  • lemon pepper (to taste)
  • salt (to taste)

Directions

Step 1
Add all ingredients to your crock pot, stir and cover. Cook on low for 8 hours or high for 4-5 hours. Enjoy!!

    I made this a few weeks ago and it was great! Just had the leftovers today, which brought me back to this page. Still as delicious as when I first had it. Thank you! I have added it to my (small, yet growing) arsenal of recipes.

    loving all of your skinny recipes, Stephanie! And those skinny brownies are still in my head. I am always looking for “comfort” food meals during the week when the weather is warm, but it’s hard to find ones that we’d feel good about eating. I am loving this lightened up recipe!
