No Bake Mint Chip Sandwich Cookies

No Bake Mint Chip Sandwich Cookies
Serves 35
These No Bake Mint Chip Sandwich Cookies are so incredibly delicious, you would never guess how easy they are to make! Great idea for a St Patty's Day treat!

Ingredients

  • 6oz cream cheese (softened)
  • 4 tablespoons unsalted butter (softened)
  • 1 1/2 cup powdered sugar
  • 1/2 teaspoon peppermint extract
  • 3 drops green food coloring (optional)
  • 3/4 cups mini chocolate chips
  • 70 vanilla wafers
  • 1 1/2 cup semi sweet chocolate chips
  • sprinkles

Directions

Step 1
In a mixing bowl beat together the cream cheese and butter until smooth and light. Add sugar, mint, and food coloring and mix well. stir in mini chips.
Step 2
Scoop a heaping teaspoon of mint filling onto half of the vanilla wafers. Gently top with remaining wafers and freeze for at least 30 minutes or until filling is very firm.
Step 3
Melt chocolate in a glass bowl in the microwave in 30 second bursts, stirring each time until melted and smooth. Dip half of each cookie sandwich and immediately add sprinkles. Keep covered and refrigerated.
