Ingredients
Cupcakes
- 1 3/4 cup flour
- 1 cup sugar
- 1/2 cup brown sugar
- 1/2 cup butter (softened)
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/3 cup buttermilk
- 3oz unsweetened bakers chocolate (melted)
Frosting
- 1 cup butter (softened)
- 2/3 cups cocoa powder
- 3 cups powdered sugar
- 3-6 heaped tablespoons brewed coffee
- 1 teaspoon vanilla extract
Topping
- 1/2 cup toffee bits

Step 1 | |
Preheat oven to 350 Mix all cake ingredients in a mixer on low for 30 seconds. mix on high for 3 minutes. Pour batter into prepared muffin tins 2/3 of the way full. Bake for 13-15 min or until toothpick inserted comes out clean. Let cool before frosting. | |

Beat the butter, sugar, cocoa, and vanilla with 3 TBS coffee until smooth and creamy. If too thick add more coffee 1 TBS at a time. Pipe or spread onto cooled cupcakes and sprinkle with toffee bits. Store in a covered container. |
