Fudgy Coconut Oil Brownies
Serves 9-12
You would never guess these Fudgy Coconut Oil Brownies are made with NO butter and NO eggs! They are as rich, moist, fudgy, and one of the best brownies ever!!

Ingredients

  • 1/2 cup coconut oil
  • 3/4 cups semi sweet chocolate chips
  • 1/2 cup cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 2 tablespoons brewed coffee (or hot water)
  • 1 cup all purpose flour
  • 1/4 cup mini chocolate chips

Directions

Step 1
Preheat oven to 350
In a large glass bowl, melt the coconut oil and chocolate chips in the microwave for about 60 seconds, stirring halfway through, until melted and smooth. Stir in cocoa powder and sugar. Add milk and coffee (or water) and stir until well combined. Stir in flour. Pour into a greased 8" square pan and sprinkle with mini chips. Bake 30-35 minutes or until toothpick inserted into the center comes out with fudgy crumbs.
