Brownie Snowballs

This recipe for Brownie Snowballs is so fun and festive - and delicious! Add these to your holiday cookie trays this year and "wow" your friends and family!
Ingredients
- 4oz unsweetened Bakers Chocolate
- 1 cup butter
- 2 cups sugar
- 1/4 cup strong brewed coffee (I used Maxwell House)
- 4 eggs
- 1/2 teaspoon salt
- 1 1/2 cup flour
- 36 mini marshmallows (I used Jet Puffed)
- 14oz white chocolate
- 2 1/2 cups shredded coconut (I used Bakers)

Preheat oven to 350 In a large bowl melt the bakers chocolate with butter in the microwave. Stir until smooth. Add coffee, sugar and eggs, one at a time, stirring after each addition. Add salt and flour and mix until combined. Pour batter into a greased 9x13" pan. Bake about 20 minutes or until a toothpick inserted in the center of the brownies comes out with fudgy crumbs. Cut the brownies into 18 squares and cut off the edges. Slightly flatten each brownie and roll them into balls around 2 mini marshmallows. Set the balls on a cookie sheet and freeze for about 30 minutes. | |
Step 3 | |
Melt white chocolate according to package instructions and dip each brownie ball into the chocolate until well coated. Immediately roll in coconut. Set on a cookie sheet until the chocolate sets up. Store in a covered container. |
