Brown Butter Butternut Squash Soup
Brown Butter Butternut Squash Soup is the perfect fall comfort food. This easy soup recipe comes together fast and is great with warm bread on busy weekdays!
- 1 Large butternut squash (roasted until soft)
- 1/4 cup brown butter
- 2 cups chicken stock
- 1 cup whole milk
- dash nutmeg
- salt and pepper (to taste)
|In a food processor puree the roasted squash with the milk until smooth. Set aside.|
|In a saucepan over medium heat, cook the butter until foamy and a deep golden brown. Stir in the squash, chicken stock, nutmeg, and salt and pepper until creamy and hot. |
Garnish with sour cream if desired.
