Chocolate Peppermint M and M Cookies

Chocolate Peppermint M and M Cookies

Total time 18 minutes
These soft, thick, and chewy Chocolate Peppermint M and M Cookies are the perfect easy christmas cookie recipe! The green and red make them extra festive!

Ingredients

  • 1 cup unsalted butter (softened)
  • 2 tablespoons canola oil
  • 1/2 cup brown sugar
  • 1 cup granulated sugar
  • 3/4 cups cocoa powder
  • 1 teaspoon peppermint extract
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 tablespoon cornstarch
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 1/3 cups all purpose flour
  • 1 cup semi sweet chocolate chips
  • 1 cup Andes mint baking pieces
  • 1 cup M&M's

Directions

Step 1
In a mixing bowl, cream the butter, oil, and sugars. Mix in cocoa. Add peppermint, eggs, and salt and mix well. Add cornstarch, baking soda, and baking powder, and mix. Add flour and mix just until combined. Stir in chips and candy.
Step 2
Preheat oven to 350
Drop dough by rounded spoonfuls onto an ungreased cookie sheet 2" apart. Bake 8 minutes. Let cool on sheet a few minutes before transferring to a wire rack to cool completely. Store in an airtight container.

    I live in Australia and the cost of buying the Andes product from the US is prohibitive. What sort of product should I look for as a substitute for the Andes pieces. Should it be crunchy, soft, easy to melt? I can’t find any info describing the Andes product in detail to be able to work out a substitute…

      Oh what a shame! Andes are small chocolate bars with layers dark chocolate and mint. You could just use chocolate chips and add a touch more mint extract. They will still be delicious!
