Chocolate Peppermint Biscotti

Chocolate Peppermint Biscotti

Chocolate Peppermint Biscotti
This Chocolate Peppermint Biscotti is the perfect cookie for dunking in coffee. These crunchy, festive cookies also make beautiful Christmas gifts!

Ingredients

Biscotti

  • 1/2 cup unsalted butter (softened)
  • 1 1/4 cup granulated sugar
  • 3/4 cups cocoa powder
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups all purpose flour
  • 1 1/2 cup semi sweet chocolate chips

Topping

  • 4oz white chocolate
  • 2 candy canes (crushed)

Directions

Biscotti
Step 1
Preheat oven to 350
In a large mixing bowl cream the butter and sugar. Mix in the cocoa powder. Mix in the eggs until well combined. Add salt and soda and mix well. Add flour and mix until combined. Stir in chocolate chips.
Form dough into a loaf shape about 12x4" and bake on a silicone baking mat or parchment cookie sheet for 30 minutes.
Step 2
Slice the loaf into 3/4-1" slices and bake for 5 more minutes with the cut side down. Flip the cookies and bake 5 more minutes. Let cool.
Topping
Step 3
Drizzle the the top of each biscotti with the melted white chocolate and sprinkle with crushed candy canes. Allow to set up before storing in a sealed container.

    I made these for Christmas cookie gift platters that our team in the operating room gives to the Pre-op and PACU nurses every Christmas and boy are they amazing! Loved by all and the recipe was asked for many times. Thanks for the excellent recipe!!!

    If I freeze these, when should I add the topping? Can the topping freeze or should I wait until I’m ready to gift these?

      I would add the topping just before gifting. I have frozen them with the topping on, but the candy cane bits aren’t as good that way. Enjoy, Abby!

      You should be able to freeze the toppings too. Make sure you use a good freezer bag or container.

    These look beautiful! Just what I needed to top off my Christmas baskets this year! One question though. How do you keep the crushed candy canes on the biscotti as in the photo? The instructions don’t seem to match the pictures-although I may just simply be missing a step somewhere. Wouldn’t be the first time! 😉

    Oh my, these are wonderful. I usually stay away from biscotti because they can be so hard. I think I will eliminate the second baking and keep everything else. Thanks!

      Dip them in coffee, tea or hot chocolate and they almost melt in your mouth! That’s the ONLY way I eat biscotti and I LOVE it!
