Chili Lime Chicken with Pineapple Avocado Salsa

- 1 tablespoon oil
- 4 Medium boneless, skinless chicken breasts (pounded to 1/2)
- 1/2 teaspoon sea salt
- 1 teaspoon garlic powder
- 1 1/2 teaspoon chili powder
- 1/2 teaspoon onion powder
- 1 lime
- 1 cup chopped pineapple
- 1 cup chopped avocado
- 1/2 cup seeded, chopped tomato
- 1 lime (juice AND zest)
- 1/4 cup finely minced red onion
- sea salt (to taste)
- 1-2 tablespoon honey (if desired for extra sweetness)
|Add all salsa ingredients (except honey) to a bowl and gently stir. If extra sweetness is desired, add honey to taste. Set aside.|
|Add salt, garlic, chili, and onion powders in a small bowl and mix together. |
Rub the chicken evenly with spices.
|Add oil to a large skillet over medium/high heat. |
Place seasoned chicken in the pan and cook for 5 minutes.
Flip chicken and drop heat to medium and cook another 5 minutes or until cooked through.
Squeeze lime juice over chicken and top with salsa.
