Chewy Cinnamon Cookies with Dark Chocolate Chips

Chewy Cinnamon Cookies with Dark Chocolate Chips

This recipe for Chewy Cinnamon Cookies with Dark Chocolate Chips is one you will make again and again. It will be perfect on your holiday cookie trays too!

Ingredients

  • 1 cup butter (softened)
  • 1 cup brown sugar (packed)
  • 1/2 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cornstarch
  • 2 1/2 cups flour
  • 1 cup cinnamon chips
  • 1 cup dark chocolate chips

Directions

Step 1
Preheat oven to 350
In a mixing bowl cream the butter and sugars until light and fluffy. Add the eggs and vanilla and mix again. Add the cinnamon, baking soda, and salt and mix well. Slowly add the flour and cornstarch, mixing just until incorporated. Stir in the chips.
Step 2
Drop scoops of cookie dough 2" apart on an ungreased cookie sheet. Bake for 6-8 minutes - do not over bake or they won't be soft and chewy.
Let cool on wire racks. Store in a tightly sealed container.

    Oh wow! These are great. I have a child with severe but allergies so I substituted vanilla extract for the almond extract in the cookie and butter extract for the almond extract in the icing. AMAZING! Thanks for the recipe!

    WOWWWWWW!! Love chocolate & cinnamon, so the combo of both is amazing!! I used dark and light metal cookie sheets…the light, baked cookies more firm, but still yummy and chewy…with the dark, I had to bake cookies for 11 minutes and they were still pretty soft, when I transferred them to the rack for cooling, BUT ohhhhhh myyyyyy goodness, were they beyond yummy!! Both were FANTASTIC!! Thanks for this awesome recipe!! :o)

      WAIT WAIT…I SAID THAT BACKWARDS!! THE DARK COOKIE SHEETS–I BAKED THE REGULAR 8 MIN AND THEY WERE GREAT…IT’S THE LIGHT METAL, THAT TOOK LONGER AND THEY WERE SOFTER!! SORRY!! :o)
