Cheesy Ranch Chicken and Potatoes

Cheesy Ranch Chicken and Potatoes
Serves 4-6

Cook time 8 hours
Total time 8 hours, 10 minutes
Cheesy Ranch Chicken and Potatoes is ultimate comfort food made easy in the slow cooker! Once you make this creamy, cheesy meal, it's sure to be a favorite!

Ingredients

  • 1 1/2lb potatoes (peeled and cubed)
  • 1 1/2lb boneless skinless chicken breasts (can even use frozen chicken!)
  • 1 packet dry ranch dressing mix
  • 1/2 cup milk
  • 8oz cream cheese
  • 1 can cream of chicken soup
  • 1 1/2 cup shredded cheddar cheese (divided)

Directions

Step 1
In a large bowl mix together the ranch mix, cream cheese, soup, milk, and 1 cup of cheese. Stir in potatoes and chicken and add to slow cooker. Cover and cook on low 8 hours. Sprinkle with remaining cheese before serving.

    To cut down on hours of cooking, can you use the whole chicken already cooked from the deli at grocery stores. Just shred the amount you think you need. If so, how much time to blend all the other items.

      Everything cooks for the same length of time all together in the slow cooker. Are you trying to avoid the slow cooker? You could cook the potatoes, covered, in the oven with the other ingredients at 375 for 45 minutes or until tender. Enjoy!

    I am a full time student and my man is an all the time hungary farm boy… This was super easy to whip together before I left for class all day and it’ll be finished when we both get home! Can’t wait to try!! Plus you can’t go wrong with cheese and ranch!!

    Spotted this on Pinterest…can you make this without the cheese and maybe just add it to individual plates later? My husband is a freak (there, I said it!) who hates cheese. 🙁

      You can cut them into pieces if you like! I actually put it in frozen and whole. Either way works, enjoy!
