Candy Cane Fluff Brownies are a winning combination of light, creamy peppermint fluff with rich, chewy fudge brownies! A perfect, easy Christmas dessert!
- 1 cup unsalted butter (melted)
- 1 cup cocoa powder
- 2 1/2 cups granulated sugar
- 4 eggs
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1 1/4 cup all purpose flour
- 1 cup semi sweet chocolate chips
- 8oz cream cheese (softened)
- 1 3/4 cup powdered sugar
- 1/2 teaspoon peppermint extract
- 8oz cool whip
- 1/2 cup finely crushed candy canes
|Preheat oven to 350 |
In a mixing bowl stir cocoa and melted butter until combined. Add sugar and mix well. Stir in vanilla and salt, and mix in eggs, one at a time. Mix in the flour until combined. Stir in chocolate chips.
Spread into a greased 9x13" pan and bake about 20-25 minutes or until tester inserted into the center comes out mostly clean with fudgy crumbs. Let cool completely.
|In a large mixing bowl, beat cream cheese, powdered sugar, and peppermint until light and creamy. Fold in cool whip and candy canes. Spread evenly over cooled brownies and chill 2 hours before serving.|

Could I replace the cool whip in the recipe with fluff or freshly whipped cream? Just can’t stand the taste of it

That would be fantastic! I wanted to use Andy’s peppermint crunch bits, but have not been able to find them this year. The mint will be wonderful, enjoy!
