Almond Fudge Cupcakes

Almond Fudge Kiss Cupcakes

Almond Fudge Kiss Cupcakes
Serves 24
Prep time 15 minutes
Cook time 15 minutes
Total time 30 minutes
Rich buttery almond cupcakes with chocolate fudge frosting and almond kisses.

Ingredients

  • 1/2 cup oil
  • 1/4 cup corn starch

cupcakes

  • 2 cups sugar
  • 1/2 cup butter (softened)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 heaped teaspoon almond extract
  • 2 3/4 cups all purpose flour
  • 2 1/2 teaspoons baking powder
  • 1 cup buttermilk

frosting

  • 5oz unsweetened bakers chocolate (melted and cooled)
  • 1/2 cup butter (softened)
  • 3 1/2 cups powdered sugar
  • 1/4 teaspoon almond extract
  • 1/3 cup milk

Directions

Cupcakes
Step 1
Preheat oven to 350.
In large bowl beat together sugar, oil, and butter until very light and fluffy.
Add in vanilla, almond extract, and eggs one at a time, mix well.
With mixer on low gradually add in baking powder, half of the flour, and half of the milk. Then add corn starch and remaining flour and milk. Mix very well.
Pour evenly into 24 cupcake liners. Bake about 15 minutes or until toothpick inserted comes out clean.
Remove from tins and let cool completely before frosting.
Frosting
Step 2
Beat together the melted (cooled) chocolate with the butter until smooth.
Add in the almond extract, sugar, and a few TBS of the milk, mix well. If too thick, add more milk and beat again. Pipe or spread onto cooled cupcakes.

    Eek, it looks so perfect girlie! I LOVE the sweet, nutty flavor almond extract lends to cakes and frostings. I can only imagine how decadent this cupcake is! And I super heart the Hershey Kiss adornment, of course 🙂

    Stephanie can I just say that your photography is gorgeous? Each new post, I am blown away! I am especially in love with the third photo down – the cupcake on it’s side showing just the frosting – gorgeous! And your frosting piping job is perfection, too!! 🙂

      Thank you so much, Sally! That’s a great compliment coming from you 🙂 my hubby got me a new lens for my birthday and these cupcakes were the first things I shot!
      Don’t look too close at some upcoming posts…I have SO many from last year that I never shared and I like to think my photog skills have improved since then. 😉

    I really like that there are no nuts in these cupcakes. Sometimes the extract is all you need. And I am not a fan of super sweet frosting either but super chocolatey frosting? Now, I am all over that!! 🙂
