20 Minute Cheesy Sweet Potato Hash

20 Minute Cheesy Sweet Potato Hash

Total time 20 minutes
20 Minute Cheesy Sweet Potato Hash is an easy, hearty, budget friendly dinner for busy weeknights! Made in one skillet on the stove for easy clean up too!

Ingredients

  • 2 tablespoons oil
  • 15oz cans MARY KITCHEN® Corned Beef Hash
  • 3 cups sweet potatoes (peeled and chopped into bite sized pieces)
  • 1 Small onion
  • 1/2 teaspoon garlic powder
  • salt and pepper (to taste)
  • 1 1/2 cup shredded cheddar cheese
  • parsley (for garnish, optional)
  • sour cream (optional)

Directions

Step 1
Add oil to a large skillet and turn on the heat to medium-high. Add hash, potatoes, onion, and seasonings, and cook and stir about 12-15 minutes or until potatoes are tender and hash is crisp.
Step 2
Stir in cheese and top with parsley and sour cream, if desired. Ready to serve!
