If we were friends going on a lunch date, we might go to Olive Garden. I would order soup, salad, and breadsticks because… this soup! The minestrone soup from Olive Garden is my favorite. So, naturally, I had to replicate it so I could enjoy it at home any time I want! This recipe is spot on, kids, and it’s ready in 30 minutes!!

This soup in not only healthy, but it’s filling too, and super delicious! Even my meat loving husband and father enjoyed this vegetarian soup! That’s really saying something!
There are so many veggies packed into this soup – it really is quite nutritious! If you see a veggie in the ingredients list that you dislike, go ahead and swap it out for something else. Or just leave it out altogether. Although my hubby ate this without complaint and he normally wouldn’t eat a lot of these veggies in their own. The combination of all the flavors together really is scrumptious!

Olive Garden Minestrone Soup Copycat Recipe

- 2 tablespoons oil
- 1 Medium onion (chopped)
- 6oz carrots (chopped)
- 8oz green beans (cut in half)
- 6oz kale (chopped)
- 1 Medium zucchini (chopped)
- 4oz pasta (can use any kind of small pasta)
- 1 can white beans (drained)
- 1 can red kidney beans (drained)
- 28oz crushed tomatoes
- 4 cups vegetable stock
- 1 heaped teaspoon garlic powder
- 1 teaspoon onion powder
- 1 1/2 teaspoon oregano
- 1/2 teaspoon basil
- salt and pepper (to taste)
|In a large pot heat 2 TBS oil. Add onion, carrots, kale, and green beans, zucchini, salt and pepper, garlic, onion powder, oregano, and basil and saute about 10 minutes or until veggies start to soften.|
|Stir in pasta, beans, tomatoes, and vegetable stock and cook about 15-20 minutes or until pasta is cooked.|
