That needed to change. I had something extra special in mind for these little cupcakes too :)  I had an appointment for an ultrasound, where we would find out the sex of our baby, and my husband was not able to get the day off work. So I decided we needed to find a fun way of sharing the news with him when he got home that night. Lemon Cupcakes with Lemon Frosting

Light and fluffy Lemon Cupcakes with Lemon Frosting are bursting with flavor! They are so moist and bright and the sprinkles add a nice crunch and beautiful color to the smooth, creamy frosting!



  • 2 1/2 cups flour
  • 2 cups sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 cup milk
  • 1 cup lemon luice
  • 1/3 cup butter
  • 1/3 cup canola oil
  • 2 eggs
  • 1 teaspoon vanilla extract


  • 1/2 cup butter (softened)
  • 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 3-4 tablespoons lemon luice


Step 1
Preheat oven to 350
In a large mixing bowl beat together all cake ingredients on low until combined, then beat on medium for 2 minutes. Pour into prepared cupcake tins and bake 14 minutes or until done. Remove from tins and let cool completely before frosting.
Step 2
In a bowl beat together the butter, sugar, vanilla, and 2 TBS of lemon juice. If needed add more lemon juice and beat until light and fluffy. Spread or pipe onto cooled cupcakes. Add sprinkles if desired.

    To tell our parents (both sides) we were pregnant with their first grandchild, we invited them to dinner. For dessert, we set a cake in the middle of the table that said, “Happy Grandparents Day!” It was one of the best moments EVER in my life, watching as the message registered with them one by one. That was 20 years ago… thanks for triggering a great memory for me.

    Now I’m craving something lemony! I don’t use it a whole lot since my husband isn’t a lemon fan. I might have to make me and the kids a little treat this week.
