I have a hard time cooking dinner in the summer when it’s really hot outside. Hot food on a hot day just isn’t appealing to me. I added lots of protein to this cool, creamy salad so you can eat it as a main dish. We have had lots of days eating this out on our deck already – even the kids love it! This would be great for a picnic or cook out too!
I picked up some of the new and improved Kraft pourables from walmart when I got the idea for this salad. I used a light ranch this time, and honestly, you would never know it was light. It is creamier, with more buttermilk and herbs, and tastes even better than before! I added some salmon, tomatoes, and sweet peppers to the cart and headed home to make this for lunch.
This recipe makes a nice big bowl of pasta salad. I was a little worried it was more than we could eat…I was wrong. I had no idea my kids would gobble this up so fast! Everyday until it was gone my boys would answer PASTA when I asked what they wanted for lunch. I guess you could call this a hit!
Creamy Pasta Salad Supreme
- 12oz bowtie pasta (cooked, drained, and cooled)
- 12oz salmon (cooked and flaked)
- 1 1/2 cup shredded cheese
- 1 Large tomato (chopped)
- 1 Large orange pepper (chopped)
- 1/4 teaspoon dill
- 1 1/2 cup ranch dressing (I used KRAFT light ranch)
- salt and pepper (to taste)
|In a large bowl gently stir together all ingredients. Cover and chill. Serve cold.|
